All purpose taquitos

Try this recipe from my mother’s cookbook for breakfast, lunch or a get together.

. 1 tube chorizo
. 1 can of refried beans
. 2 cups of shredded mozzarella
. 12 medium size flour tortillas
. Salt and pepper
. 1 cup sour cream
. 5 tablespoons hot sauce

1. To start, preheat an oven to 350 degrees. Heat a small pan on the stovetop and add tube of chorizo. While cooking, use a spatula to chop the chorizo until well grounded. After the chorizo is cooked, mix the chorizo, refried beans, and mozzarella into a mixing bowl. This is your taquito mix.

2. Place flour tortillas on two greased pizza pans. Add 1/2 cup of taquito mix to each tortilla and fold. Place the fold bottom down to prevent spillage. After all taquitos are wrapped, place in oven at 350 degrees for 10 mins or until mix is melted.

3. While taquitos are cooking pour 1 cup of sour cream into small bowl. Add 5 tablespoons of hot sauce and salt and pepper as needed. When the taquitos are done, serve whole or cut in half. Your friends and family can all share the dip and the experience. Enjoy!
